Homemade Apple Cinnamon Poptarts

on

I was looking for inspiration and I found an awesome recipe on homemade apple cinnamon poptarts on a blog called offbeat + inspired.

I’ve modified their recipe just a little bit and added chunks of apples. The result tasted just like an apple pie from MacDonalds but much healthier.

I rank this recipe 4 biceps out of 5.

The reason for this ranking is because moulding the tarts can be quite a challenge. As there are no flour and egg used in the recipe, the dough tends to crumble pretty easily. You will need some technique to make the tarts.  I will give some tips later in the recipe to help you with that. Just be patient about it and I am sure you can also master the technique.

Ingredients needed:

Poptarts Crust

450g of almond flour

6 pieces of pitted dates

1 tablespoon of coconut oil

1 teaspoon of cinnamon powder

Water to form the dough

Pinch of Himalayan sea salt

Apple filling

2 whole apple and cut the fresh into small cubes

1 cup of coconut milk

1 teaspoon of cinnamon powder

1. Start by mixing the dates and almond flour in the food processor until they are evenly mixed and grounded up.

2. Pour the mixture into a mixing bowl and add cinnamon powder, salt and coconut oil. Continue to mix them while slowly adding water till the mixture becomes a dough. (Be careful not to add too much water at the beginning).

3. Next, divide your dough into two and spread them on two separate baking paper. (I cover the dough with baking paper to roll them so it would be easier to spread them evenly).

4. Cut the flattened dough into equal squares (the size depending your preference). Do the same with the other dough sheet and put them in the fridge till you are ready to use them.

5. Cook your apple cubes, coconut milk and cinnamon powder in a small pan for about 20 minutes on low heat.

6. Use a spatula to lift the chilled square dough off the baking paper and carefully transfer onto the non stick baking tray (the spatula would help prevent the square dough from crumbling which lifting them up).

7. Spread the apple filling onto the dough and cover with another square dough.

8. Use a fork to gently press the edges and to make some holes on top of the tarts.

9. Bake the tarts at 180 degrees for about 20 minutes or till golden brown. Leave the tarts to cool.
