I am sure many of us who had tried making protein-based snacks would know that whey protein tends to make your snack a bit drier and firmer after baking it, unfortunately.
There are various methods you can use to make sure that your protein snacks retain the moisture: such as adding fruits into the mix. I’ve recently discovered another method you can use to make your protein pancake super fluffy, and I’d like to share my method with you. By adding beaten egg whites into the protein pancake mixture, your protein pancakes will be fluffy and moist, just like how good pancakes should be!

Beat your egg whites till they’re stiff.
Slowly fold your protein pancake mixture into the beaten egg whites. You need to make sure you do not get too excited and mix them too quickly. Or else, your egg whites will collapse and become flat instead of fluffy. Just slowly fold them and you will have a consistent mix in no time. 🙂
Heat your pan on a medium setting. I like to use a non-stick pan so I do not need to add any oil (but its really up to your preference here). Pour about a cup of your mixture into the pan and watch your pancake until bubbles start to form on the surface.
Once the bubbles start to form and the pancake mix starts to harden a bit, flip it to the other side and let it cook till light brown.
Taddaa! You will find that your pancake will be fluffier than the conventional way of preparing them using just protein pancake mix alone. Enjoy your fluffy pancakes! 🙂
